Hello Helpers! Welcome back to another edition of Food for Every Soul! In this series, I interview people from the Help Force about their favourite and famous recipes. For this week’s recipe, I interviewed Runa!

I started by asking her some questions about the recipe she had decided to share with us today.
Welcome to our recipe series interview today! Can you tell us which recipe you will be sharing?
That sounds delish! Can you tell us why this recipe is important to you, and is there any history or story behind this food?
This recipe was recommended to me by my mum, and she holds a special place in my heart, so it’s equally as special to me. The story of this one is pretty short. My mum ended up calling me one day to test out this new app where we can share recipes. And the first one she ended up adding was the iconic blueberry “cheesecake” bread, which fit perfectly with my tastes. So I ended up making it a bit later, and it was delicious. Always trusting my mum’s recommendations haha
Here is the moment we’ve all been waiting for: the recipe for Blueberry cream cheese bread!
Ingredients:
- 1 cup softened butter
- 8 oz softened cream cheese
- 3/4th cup sugar
- 2 tsp vanilla extract
- 4 eggs 2 cups flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 2 cups fresh blueberries
(Makes two loaves)
Instructions:
- Preheat the oven to 350°F/around 176°C, and cover two 9×5 loaf pans with parchment paper.
- In a large mixing bowl, cream together the wet ingredients (butter, cream cheese, & sugar). Add in the vanilla extract & eggs.
- In a separate bowl, mix the dry ingredients (flour, baking powder & salt)
- Slowly add the dry ingredients to the wet.
- Combine 1 tablespoon of flour and the fresh blueberries before folding them into the batter.
- Pour batter into the prepped pans and bake for ~50 minutes.
- Remove from the oven and allow to cool.

Do you have any tips or tricks on making it, or why people may like this recipe, or any memories from it?
Make sure to add the flour to the blueberries, as it helps prevent the blueberries from sinking to the bottom of the loaf. Also, if your batter is thick, that’s normal! If it’s watery, you might’ve added too much of a wet ingredient. To fix that, add in a bit more flour to thicken it up.
