Food For Every Soul

Hello Helpers! Welcome back to another edition of Food for Every Soul! In this series, I interview people from the Help Force about their favourite and famous recipes. For this week’s recipe, I interviewed Shorty!

I started by asking her some questions about the recipe she had decided to share with us today.


Welcome to our recipe series interview today! Can you tell us which recipe you will be sharing?

Thank you! It’s a a Mexican traditional dish from Jalisco, it’s called Carnes en su Jugo or in English “Meat on it’s own juice”

Here is the moment we’ve all been waiting for: the recipe for Carnes en su Jugo!

 Preparation/Instructions

  • 1kg – 2.205 lbs of Flap meat/ Sirloin cut really thin and into bite-sized pieces.
  • Cover the meat with water and add half a lime and salt to taste leave it over night or at least 2 hours in the fridge.
  • cook in water 1.5 lbs of tomatillo

In a blender add:

  • Your cooked tomatillos
  • One raw chile poblano / poblano pepper
  • Black Pepper to your taste
  • Oregano
  • 2 garlic
  • 4 cloves
  • 3 tablespoons of Knorr chicken bouillon
  • 1/2 of a bunch of cilantro
  • 1/4 of an onion
  • 2 corn tortillas
  • Cook a full package of bacon until crispy
  1. Cook your meat over low heat, turning it occasionally as it heats.
  2. Add your blended sauce to the meat while it’s heating.
  3. Add half of your bacon into the pot and leave the rest for later.
  4. Once everything is cooked, you can add: Some bacon you saved for later, onion, cilantro, beans, lime, and a good guacamole.
  5. Don’t forget your tortillas, chips and quesadillas.
