Hello Helpers! Welcome back to another edition of Food for Every Soul! In this series, I interview people from the Help Force about their favourite and famous recipes. For this week’s recipe, I interviewed Laiba!

I started by asking her some questions about the recipe she had decided to share with us today.
Welcome to our recipe series interview today! Can you tell us which recipe you will be sharing?
Yay thank you! Today I will be going through my Chocolate Chip Banana Bread recipe!!
Sounds delish! Can you tell us why this recipe is important to you, and is there any history or story behind this food?
This recipe is important to me because I don’t really enjoy baking usually but with this, I’m obsessed. My mum used to make it with nuts and dates but I never used to like it so one day I thought to ask her to make it with chocolate chips. I’ve made it probably over 10 times since then and this only happened a few months ago!
Here is the moment we’ve all been waiting for: Choco Chip Banana Bread!
- 125g Unsalted butter
- 140g Light brown sugar
- 1tsp Vanilla extract
- 1 Egg beaten
- 2 Bananas (ripe)
- 1tsp Cinnamon
- 190g Self-raising flour
- 1tsp Baking powder
- 60ml Milk
- 1/4 to 1/2 of a pack of milk chocolate chips
- Melt unsalted butter and light brown sugar in saucepan on medium heat. During this, you can grease the loaf tin with butter to ensure the banana bread won’t stick to the sides. Once melted, remove pan from heat and leave to cool.
- In a mixing bowl, mash two bananas, add egg, vanilla extract and the melted unsalted butter + light brown sugar mixture.
- Pre-heat oven, I usually bake on 180C fan. Oven should be on for at least 5 minutes before batter goes inside after all steps.
- Add the self-raising flour and baking powder to bowl. Stir it and add the milk then the cinnamon powder.
- Add your topping and mix it in slightly! I like to add milk chocolate chips but some people prefer to add crushed nuts or figs!
- Pour your batter into the loaf tin and place it into your oven carefully. Leave it to bake for around 35-40 minutes.
- After your 35 minute timer goes off, use a regular knife and put it in the banana bread. If the knife has anything on it, that means it could do with roughly 5 to 8 more minutes. If the knife shows melted chocolate and none of the banana bread on it, you can take it out!
- Leave to rest for 10 to 20 minutes, then gently tip the banana bread upside down onto a chopping board. Use a large knife to slice and enjoy!!🤍
Do you have any tips or tricks for making it, reasons people might like this recipe, or any memories associated with it?
If you’d like to, use nuts instead! Some people prefer having a crunch and it would still taste great. It’s up to you what you’d like to have as your extra. Some people like sprinkling sugar on top! Also, if you want extra sweetness you can add 2/3 chopped dates or a bit more vanilla extract in the batter! I think people will like this recipe because it’s very easy to make and it’s a nice sweet treat.
