Ingredients

» Superior quality white flour – 13 oz.

» Salt – 1 tsp

» Sunflower oil – 5 tbsp (for the dough) (edited)

» Cow cheese (preferably salty) – 1 lb

» 6 eggs

» Cow milk – 9½ oz.

» Sunflower oil – 9½ oz. (for greasing, etc.)

Step 1: Put the flour, 1 tsp of salt and 5 tbsp of oil in a bowl. Heat approximately 1-2 cups of water that you will use for the dough. So rule no. 1 – the water must necessarily be hot and the dough must be worked hot.

Step 2: Pour a little water into the flour mixture and kneed a soft, non-sticky dough

Step 3: Then take it out on a table sprinkled with flour and knead it a little more. Cover with a towel and let it rest for 15 min. So rule no. 2. The dough must rest for these 15 mins.

Step 4: After 15 minutes, knead it well (sprinkle a little flour on the table) until it becomes a smooth and uniform dough. Notice the difference between the picture from step 3 and step 4.

Step 5: If you have a kitchen table of at least 1 square meter, then make 2 dough balls from the formed dough. If you have a smaller one, make three balls better. I have one square meter, so I made 2 dough balls Leave the dough to rest for another 10 minutes.

Step 6: Then you spread these balls with the spatula to be approximately ⅛ – 5/32 inch thick. Lubricate them well with oil and leave for another 10 minutes. Be careful that is it warm in the kitchen, it is better to close the window so that there are no drafts of cold air

Step 7: During this time, prepare the cheese filling – mix the cottage cheese with 5 eggs, salt (about 1 tbsp, the filling should be salted better) and finely chopped green or white onion (you can also do it without the onion). The cheese mixture must be more liquid, if you have drier cheese, and you see that 5 eggs are not enough, add a few more until you see that the filling is as it should be.

Step 8: Lay the towel on the kitchen table, take one of the oiled sheets and gently spread it out. You can stretch it a little in your hands, then put it on the towel and gently, gently pull the edges. You stretch it so that it is f.thin, so that the towel can be seen through it and you give it an oval shape about the size of the table. Here it is important not to rush, the process really calms the nervous system

Step 9: Grease the stretched sheet of dough with an oil brush. Then evenly distribute half of the amount of cheese over the entire surface.

Step 10: Then, through the bigger grater, put half of the amount of telemea, directly on the pie, evenly over the entire surface.

Step 11: And now the most pleasant process begins. Lift one of the sides of the towel, shake it slightly so that the edges of the sheet start to roll, then lift more until you reach the middle of the table/sheet with the roll.

Step 12: Repeat the roll with the other side of the towel. Here in the picture you can see how the 2 rolls are approaching each other. Bring the rolls closer to each other, cut a little from the edges, because the dough is thicker there and without the filling.

Step 13: Then cut the rolls into 3-4 pieces, to be the width of the tray in which you will bake them. Here you can see how to cut the roll, and I am guided by the size of the tray. Grease the pan with a little oil and put the roll in it.

Step 14: From a pie sheet, I cut it into 3 pieces, I got a total of 6 smaller rolls – a full pan. From both sheets of pie, 2 trays full of rolls came out. Beat an egg and brush the pies well with it. Place in the oven at medium temperature.

Step 15: Leave in the oven until they are well browned, then remove and leave in the tray for 15 minutes. Then turn the tray upside down and turn the pies onto a tray/plate. Let it cool a little more. Then you peel them from each other and cut the medium-sized pieces, it depends how you like it.

Zen: The thickness of the pie depends on how big the cheese pie tray is. Also, some may want to use sweet cheese and put sugar on top to make it sweet, others might want to use dill to give it a “stronger” taste (although I personally don’t like it when people make it with dill, it feels like I am eating literal grass). I think that it’s also good for your health! Cures depression, makes you feel good, etc.
