Hello Helpers! Welcome back to another edition of Food for Every Soul! In this series, I interview people from the Help Force about their favourite and famous recipes. For this week’s recipe, I interviewed Rez!

I started by asking him some questions about the recipe he had decided to share with us today.
Welcome to our recipe series interview today! Can you tell us which recipe you will be sharing?
hey there lucifer! thanks for having me. i’m going to be sharing something called mutton shorba!
YUMMY! Can you tell us why this recipe is important to you, and is there any history or story behind this food?
this recipe is one of my cousin’s favourites. it’s something that i can remember having for a few years now and my family like to have it seasonally, or when somebody is feeling unwell. my mum loves to make extra to give to the neighbours too. it’s always a good day when we make it.
Here is the moment we’ve all been waiting for: The recipe for Mutton Shorba!
- 500g goat meat / lamb / mutton
- 1 tsp garam masala powder
- 5-6 small green chillies (slit)
- 2-3 cardamom pods
- 2-3 cloves
- 1 tsp peppercorns
- 1 cinnamon stick roughly under an inch
- 2-3 bay leaves salt (not an exact measurement, eyeball it for taste)
- 1-2 red onions (diced) 2-3 carrots (peeled and diced)
- 2-3 potatoes (peeled and diced)
- 1 tsp ginger and garlic paste (must be fresh not frozen)
- roughly 1L room temp water
- fresh coriander (cilantro)
- make sure the listed vegs is cut up and peeled like specified
- into a pressure cooker add the meat, followed by vegetables and chilli, then spices and
finally water
- give it a stir. then add the lid making sure its on properly as well as the lid whistle
- cook on low flame for roughly 45 minutes. if you feel that you need longer, then that’s fine.
- once the time is up you want to turn the flame off completely and let it rest for about 15 –
20 mins before serving
- when served, add a few fresh coriander leaves on top

Do you have any tips or tricks for making it, reasons people might like this recipe, or any memories associated with it?
i LOVE having soups and stews when it’s cold outside so if that’s something you enjoy too definitely give it a try. you could use lamb or goat instead of mutton, but that’s what i typically use as i find that the fat really helps with the flavour. you could also experiment with different root veg and tubers, although i tried parsnips once and wasn’t a fan of how that turned out. still! there’s plenty others to try that i’m yet to experiment with myself. make sure you dice them into big chunks. and i would not recommend using softer vegetables. add fewer or more vegetables and chillies depending on your own personal preference
Thank you for this lovely recipe! Do you have anything else to say to the audience?
well i hope someone out there likes it and that everyone is keeping warm this winter!
And with that, we’ve reached the end of the post. I will be back next time with more fresh and delicious content. If anyone would like to share a recipe with us, DM me with your ideas!
Bon Appétit! <3
