Hello Helpers!!! Welcome back to another edition of Food for Every Soul, a series by myself where I interview people from Help Force about their favorite and famous recipes! For this post, I decided to interview a very special and different person…. some name him “THE WW2 SOLDIER” and some “THE NEWS MAN”! He is very much known for his indescribable highly-positive and energetic voice which is just from the 1950 movies. He starred in Casablanca… Being a very kind, loving, smart, full of worlds and adventures in which he creates, a very good artist, an ultimately unique voice, and an exceptionally hard worker, the HF Second Lieutenant SamMit!!!

I started off by asking him some questions about this delicious recipe!


Hello SamMit! Thank you for me letting me interview you today! Can you tell us what type of recipe you will be talking about today?

SamMit: I’ll be giving a recipe for homemade pizza dough and sauce. (I’m not elaborating on the toppings, since everyone has a taste of their own.)

Is this recipe important to you, like is it a family recipe or any history/story behind it?

SamMit: It is not a family recipe, no. Rather, it is the recipe to the first fully cooked dish that I made mostly by myself. Ever since, I’ve cooked it a number of times, always changing a few things here and there.


Here comes the best part, the Recipe!!! (As described in detail by SamMit)

(Note by SamMit: You need to have a blender/mixer to be able to cook the sauce.)

 

For the dough:(enough for 2, 25-30 cm wide pizzas), you’ll need: 

» 450 grams of type 00 flour 

» 20 grams of sugar (2 teaspoons) 

» 13 grams of salt (1 teaspoon) 

» One packet of yeast 

» 1.5 soup spoons of olive oil (or sunflower seed oil) 

» 250 millilitres of warm water (Between 30-35 degrees C)

 

For the sauce: you’ll need: 

» One can of tomatoes (400 grams) (chopped, whole, whatever you can find) 

» Half an onion 

» 2 cloves of garlic (You can also add: half a pepper and two mushrooms) 

» Salt and black pepper to taste 

» 2 tablespoons of sugar (Suggested herbs/spices: paprika, smoked paprika, spicy paprika, dried savoury, dried basil)

 

How to cook the Pizza:

1. Get a large bowl and pour in the warm water, add the sugar, oil and the yeast. In a separate bowl, prepare the flour (sift it through something to ensure there are no clumps) and add the salt. After the yeast has had 5-6 minutes to “wake up”, you can start adding the flour and salt to the mixture.

2. Once you have mixed everything, feel free to make adjustments to the dough, add extra flour or water, if need be. Then, pull the dough out of the bowl on a flour covered surface, split it in two and knead each respective half for about 10 minutes

3. Once properly kneaded, you can place both pieces of it in bowls that have been well oiled. Leave them to rest for at least 1 hour.(By the time you finish making the sauce and preparing the toppings it should be enough.)

4. In the mixer/blender, pour the tomatoes, add the onion, garlic, sugar, herbs, spices and anything else you might want to add. Blend to your heart’s content.

5. Pour the soon to be sauce on a pan (Yes, like a frying pan) and cook it on a low heat, remember to stir it often with a spatula. It is also advised that when you’re not stirring, to place a lid on(At an angle, so the steam can escape), since there will be a lot of small flying droplets of sauce, ready to burn you.

6. Once the sauce is ready, take it off the heat and feel free to transfer it to a container with a smaller bottom, so it’s easier to scoop it up when applying it to the pizza

7. Preheat the oven to 200/250 degrees Celsius (Whichever your oven allows). Prepare the cheese and toppings.

8. Pull out the dough you’re going to use. Place it on a surface that’s been thoroughly covered in flour and roll it out to the size of the pan you’re planning to use.(25-30 cm is the suggested diameter.) Spread some of the wonderful sauce you just cooked up and add the toppings and cheese.

9. Place the pizza in the oven. It should be done in 10-15 minutes. Remember to check up on it periodically

10. Once done, leave the pizza to cool down a little bit before cutting and serving.

Is there any tips or tricks on making it or why people may like this recipe, or any memories from it?

SamMit: Tips and tricks: (Note: The reason for cooking the sauce on a pan of all things is for it to be on a large surface, so that as much of it is being cooked at once and as much of the water in it evaporates. It also allows for what is to be advised in

Tip 1) When cooking the sauce, take your spatula and drag it across the bottom of the pan. If the sauce does not move to the gap you had just made, it means it is very close to being completed. If it does, fix the gap and try again the next time you stir the sauce.

Tip 2) When rolling out the dough, if you intend to make a crust, fold it underneath the dough itself, so when it expands in the oven and the fold comes a bit undone, the crust still keeps itself raised.

Tip 3) Watch out what kind of cheese and how much meat you add to the pizza, so that it does not end up too greasy, as the grease would soak in the dough and make for a very unpleasant experience.

Tip 4) Experiment! Like many things in life, there are more than one ways to achieve something, so feel free to find your own!
