Savage Food for Every Soul » The Help Force

I started off by asking Barney some questions about the recipe he decided to share with us today!


Hello Barney, welcome to the recipe interview! Can you tell us what sus recipe you will be talking about today? :PopcornNom:
Barney: It’s a long time favorite savory item of most people wanna eat, the Dabeli :pandrink:

Sounds interesting atleast its not sus, Can you tell us why this recipe is important to you, is it a family recipe, and is there any history or story behind it?

Barney: It’s neither a family recipe nor do I have any profound history attached to it. The only history for me would that of my cousin introducing me to this yummy savory a long time ago. My city has a place called “Food Steet” and that’s where I had my first Dabeli 😋, It always is a lil sus ngl


Here comes the best part, the Recipe! (As explained in detail and steps by Barney)

Basically, this snack can be described as a bun with potato stuffings, of course with spices.

Now first job would be to make the combined spice / masala for the stuffing.
To make that, you’ll need: (Measurements are for making 5 of them so just multiple accordingly)
1 tsp of coriander seeds
1/2 tsp of cumin
1/2 tsp of fennel
1/2 tsp of pepper
1/2 tsp of cinnamon
1 pod of cardamom
6 cloves
1 star anise
1 bay leaf
1 tsp of sesame seeds
2 tbsp of dry coconut
3 dried RED chilli
1/2 tsp of turmeric
1/2 tsp of dry raw mango powder
1 tsp of sugar
1/2 tsp of sugar

Preparation:
» Take a pan and add all ingredients starting from coriander seeds until red chilli, be sure to dry roast on low flame until the entire thing turns aromatic enough
» Let the spices cool and then transfer it to a blender
» Add the rest of ingredients into the blender and blend into a fine powder.

The second job would be to make the potato stuffing.
You will need:
2 tbsp of Tamarind chutney
1/4 cup of water
2 tbsp of oil
3 boiled and mashed potatoes
1/2 tsp of salt
1 tbsp of grated coconut
1 tbsp of minced coriander
2 tbsp of sev
2 tbsp of pomegranate
2 tbsp of spiced peanuts

Preparation:
» Take a sauce pan and add 2 tbsp of oil to it and let it heat up
» Grab a cup and add 3 tsp of the spices you blended along with 2 tbsp of Tamarind chutney and 1/4 cup of water
» Mix them well and let there be no lumps. After that pour it into the hot pan with the oil
» Cook for 2 minutes or until it becomes quite aromatic
» Add the potatoes with the salt and mix well
» Keep mixing to make sure everything is combined
» Add rest of the ingredients from the grated coconuts up till spiced peanuts.

The last job would be that of assembling the elements of this dish.
You will need:
5 pav or buns if you can’t find pav
Tamarind Chutney and Green chutney
Finely chopped onions
Butter

Assembling:
» Slit the pav / bun in the centre and spread some green chutney one the lower side and tamarind chutney on the upper side. » Add that potato stuffing into the pav
» Place some chopped onions with pomegranate again if you like it
» Now toast the pav in butter on both sides until they turn golden brown
» Add some more sev and now it’s ready to eat.
