Hello Helpers! Welcome back to another edition of Food for Every Soul by myself, Mayathefirst! In this series I interview people from the Help Force about their favorite and famous recipes. For this week’s recipe, I decided to interview one of our OG staff members who came back to help out: HF Admiral: Diwix!

I started off by asking Diwix some questions about the recipe that he decided to share with us today!


Welcome Diwix to our recipe series interview! Can you tell us what recipe you will talking about today?

Diwix: Thank you Maya, it’s my absolute pleasure! Today I shall be revealing my secret Butter Chicken Pasta recipe to the public!

Butter Chicken Pasta


This sounds like an amazing recipe to be eating, can you tell us why this recipe is important to you, is it a family recipe, and is there any history or story behind it?
Diwix: Well, it isn’t really anything traditional or from family, but more of an innovative recipe, that sort of happened as an accident. Made some delicious butter chicken one day, and there happened to be some pasta made too. Put them together for fun and it was heavenly. From then, I decided to figure out an actual recipe where the butter chicken acted as the sauce for the pasta, which was such a great combination!

But here comes the best part, the recipe! (As explained by Diwix!)

Chicken:

  • 1kg chicken thighs, cut into bite size cubes
  • 200ml yogurt
  • 3 Tbsp ginger garlic paste
  • 2 tsp Garam masala
  • 1 tsp turmeric
  • 1 tsp kashmiri chili powder

Sauce:

  • 4 Tbsp ghee, divided
  • 2 medium onions, thinly sliced
  • 1 Tbsp ginger garlic paste
  • 1/2 tsp Garam masala
  • 1/4 tsp turmeric
  • 1/4 tsp kashmiri chili powder
  • 1 Tbsp tomato paste
  • 1 can fire roasted diced tomatoes
  • 1/2 cup cashews
  • 100ml heavy cream
  • 3 Tbsp butter
  • 500g pasta of choice, cooked!

Instructions:

  • In a large bowl add the cut chicken thighs, yogurt, ginger garlic paste, garam masala, turmeric and kashmiri chili powder. Mix to evenly coat all the chicken with the marinade and let sit for at least 30 minutes and up to 12 hours.
  • Heat a large skillet over medium high and add in 2 Tbsp of ghee and let it melt. Once melted add the marinate chicken and cook, stirring occasionally, until the chicken is cooked through and slightly browned, about 6-8 minutes. Remove the chicken to a plate or bowl and return the same pan to the heat.
  • Add the remaining 2 Tbsp of ghee to the pan along with the sliced onions, let cook for 5 minutes until the onions begin to soften.
  • Add the ginger garlic paste to the onion and cook for another 2 minutes until fragrant. Add in the garam masala, turmeric, kashmiri red chili powder, tomato paste and continue to cook, stirring constantly, until the tomato paste just begins to toast, about 2-3 minutes.
  • Pour in the fire roasted tomatoes and cashews, bring to a simmer just for a minute then transfer the contents of the pan to a blender. Blend on high until you have a smooth sauce.
  • Strain the sauce through a fine mesh strainer back into the sauté pan and return to medium low heat. Stir in the heavy cream, then the butter and finally add the cooked chicken and al dente pasta to the pan. Toss to combine everything together and cook just until everything is heated through. Serve immediately and enjoy!

 


Do you have any tips or tricks on making it or why people may like this recipe, or any memories from it?
Diwix: Well, the recipe is pretty much perfect as it is, but I believe people may like this recipe because we get an amazing dish (pasta) and amplify it through the roof with an upgraded sauce (curry). There will be explosions of flavour with every bite. Although I may encourage those following the recipes to perhaps experiment a little with their own spices with the chicken, and maybe adding a little cheese to the finished dish for the funsies!

I generally would try this and make it for myself bc it sounds really good but thank you diwix for sharing! Do you have anything to say to the audience before we conclude this interview?
