Food for Every Soul

Hello Helpers! Welcome back to another edition of Food for Every Soul by myself, Mayathefirst! In this series I interview people from the Help Force about their favorite and famous recipes. For this week’s recipe, I decided to interview everyone’s favorite og staff member who came back now as HF Vice Commander: Ru!

I started off by asking Ru some questions about the recipe that she decided to share with us today!


Welcome Ru to our recipe series interview today! Can you tell us what recipe you will telling us about?

Ru: I will be talking about a Cafe drink that soothes every human of any day and age. It is called Cocoa Matcha Forest. I think it is a Korean inspired drink, but still not sure about it’s origin.


Can you tell us why this recipe is important to you and is there any history or story behind it?

Ru: I went to this cafe called Memory Look located in Los Angeles. It is such a lowkey but good food place, I would 100% recommend it for whoever is visiting LA. My friend had the Matcha Latte and I had this drink. Just by one sip, I became a fan of it. I wanted to have this drink on a occasionally basis. In my Barista Era, I would love to experiment and make my own drinks. So, this drink became one of my specialties and I still make it to this day 😀


And now for the moment you all been waiting for… the recipe to this yummy drink by Ru!

Ingredients:

For the Chocolate Milk Base:

» 2 spoons of sugar (or however sweet you like it—your call, I’m not here to judge)

» Hot water (just a splash, enough to get things mixed and not turn it into a soup)

» Regular milk

» Ice (the cube kind, please)

» OR, for the shortcut, pure chocolate milk—makes life easier!!

 

For the Matcha Cold Foam (the trickiest part, but you’re a pro, right?):

» Matcha powder (don’t skip this unless you’re a rebel)

» Vanilla syrup (for that extra sweetness, or scale it back if you’re into the “less is more” vibe)

» Heavy cream (the richer, the better)

» Milk frother (this is the key—without it, you’re just making a mess)

» A glass (made of glass—because who wants to drink from a plastic cup when you could have aesthetics?)

» A glass straw (yep, more aesthetics, because why not?)

Pro Tip: If you master this matcha cold foam, you’re basically a DIY cold foam expert. You can whip up vanilla, hazelnut, chocolate, caramel, butter pecan—you name it. Oh, and have you ever tried making hazelnut whipped cream? It’s like a sweet little miracle. If only I had a whipped cream maker—aka the Charger—to really elevate my game. Haha, who knew being a barista could be so fun?

 

Part 1: Chocolate Milk Base

Grab your glass and toss 1 – 1/2 spoon of cocoa powder.

Add 2 spoons of sugar (unless you like less sweetness—then adjust according to your taste).

Pro Tip: You can also try using a frother here instead of a spoon if you’re in a rush.

Pour in a small splash of hot water (about 1/4 of the glass), and mix it all together. The goal is just to dissolve the sugar, not create a hot tub.

Add regular milk to fill the glass just a bit more than halfway, and stir it up until everything is mixed smoothly.

OR, grab your glass, and fill it up a bit more than half with chocolate milk (we’re keeping things classy).

Throw in 3–4 ice cubes, and you’re pretty much good to go on the base

Part 2: Matcha Cold Foam

In another glass, combine 1 spoon of matcha powder and 3 pumps of vanilla syrup (or less if you’re not into the sweet life).

Add just a splash of heavy cream—this helps get the mix started.

Now comes the frothing magic. Grab your frother (remember, it’s important—don’t ruin your kitchen with matcha mishaps).

Place the frother into the glass and gently turn it on.

Don’t let the foam explode all over your kitchen—control the frother and keep it inside the glass.

Froth for 2–3 seconds, check the foam, and repeat if necessary. Keep going until it’s nice and frothy.

Once it’s looking good, pour in some more heavy cream (about 1/4 of the glass), and froth away until you’ve got a nice, thick layer of foam to add on top of the chocolate milk base

Pro Tip: Since you’re using cold heavy cream, the foam will be cold too! Yay, cold foam!

Finishing Touches:

Gently pour your beautiful matcha foam over the chocolate milk base. Be careful, this is where the magic happens.

For that extra “wow” factor, sprinkle a little matcha and cocoa powder on top. Aesthetics are key.

And voilà, your Cocoa Matcha Forest is ready! Sip it slowly, enjoy the frothy goodness, and feel free to experiment with other cold foam flavors. Cheers to your barista-level skills!


Do you have any tips or tricks on making it or why people may like this recipe, or any memories from it?

Ru: Probably answered few of the questions above. But yes everyone should try it and make the judgement for themselves. Many think that Matcha brings a bitter taste to everything that is added. But I assure you that this drink will definitely not ruin the hype of Matcha. It is tooooooooo good!
