Hello Helpers! Welcome back to another edition of Food for Every Soul by myself, Mayathefirst! In this series I interview people from the Help Force about their favorite and famous recipes. For this week’s recipe, I decided to interview another HF Dynasty member whos been in the army since 2020, HF Dynasty: Rainbowdj!
I started off by asking Rainbow some questions about the recipe that she decided to share with us today!
Welcome Rainbow to our recipe series interview today! Can you tell us what recipe you will telling us about?
Rainbow: Hello hello Maya 🙂 Today’s dish is ABC soup!
Can you tell us why this recipe is important to you and is there any history or story behind it?
Rainbow: Back then when people were poor, they couldn’t go to the market and they used whatever they had. It’s a simple soup and you can throw in whatever you want. That’s why it’s called ABC. Because it is a versatile soup, it became a common dish in Chinese household and each household has their own version of ABC soup, but here’s our version!
And now for the moment you all been waiting for… the recipe to this delicious soup by Rainbow!
These are the ingredients we’ll need for:
» 4 pax
» 2 carrots
» 3 potatoes
» 1 big yellow onion
» 500g soup bone – pork OR chicken
» meats – (500g) pork parts w bone OR (400g) chicken thigh/drumstick
» 8 white pepper whole
» 1 stalk of celery (optional)
» 1 ear of corn (optional)
» 1 big tomato (optional)
» 500g pork* broth OR chicken broth (if you want thicker version)
*you can substitute pork with chicken, either is fine.

Steps:
- Prep the ingredients: wash and peel the vegetables (potato, carrot, but peel the onion only) cut them in even pieces to your desired size wash the meat if:
- chicken drum/thigh – trim excess fats, and scrub with salt and wash off after 2 mins
- pork – submerge in salt water until water becomes pink (because of blood)
* Optional step – Cook rice
- For 4 pax depending how much they eat, 3-4 cups of rice, wash and rinse 2 times, pour water until your first finger tip and put in rice cooker
- Put room temp water in pot, put the soup bone, any meat in and turn on medium-low temp for 4-5 mins (to remove the scum from the meat)
- Turn off the fire, remove the bones and meat from the pot and pour the water away
- Turn the heat to medium-high, wait until the pot smokes, put 2 tablespoons of oil (depends on the amount of meat), and brown the meat 2-3 mins (depends on meat size) cooking (chicken – a bit of brown on the skin, pork – it will turn grey and a bit of brown), remove after brown.
- Put quarter onions, cut carrots in and sauté until its translucent with a bit of brown. (term is sweating the vegetable – releases the sweetness of the veg)
- Use half to half ratio of water and broth of choice in the pot of cooked onions and bring it to a simmer
- Put soup bone in and 7-8 white pepper balls
- Put desired vegetables in (preferred hardest to softest: potato, corn, celery)
- After bringing it to a simmer, barely boiling, add in desired meats and cover and cook until desired doneness (depends on the meat and softness of the potato)
- How to know if done:
Chicken: tender and falling off the bone
Pork: if you can use a fork and poke through the meat with little resistance - Remove any floating white pepper balls for easy serving.

Rainbow: For cold weather or when you’re sick, you can eat this with rice soaked in soup, or macaroni (put with the meat in step 9!) can be cooked together too! It’s very satisfying, and heavenly . Hope you’ll enjoy as much as I do! Ps. Made the version for those halal viewers too 🙂
