Hello Helpers! Welcome back to another edition of Food for Every Soul! In this series, I interview people from the Help Force about their favourite and famous recipes. For this week’s recipe, I interviewed the ONE AND ONLY 2ic: Runa!

I started by asking Runa some questions about the recipe she had decided to share with us today.


Welcome, Runa, to our recipe series interview today! Can you tell us what recipe you will be telling us about?

Howdy! The recipe I’ll be telling you about today is Lemon Loaf


Omg that sounds zesty and delicious! Can you tell us why this recipe is important to you, and is there any history or story behind it?

This recipe was first introduced to my family during the pandemic. My eldest sister used to make it all the time for us, and since then, it has become a comfort food. Now, since she’s busy with work, I’ve taken over making this sweet treat!


Here is the moment we’ve all been waiting for, the recipe for this tasty dish!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/4 cup vegetable oil
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  •  1 teaspoon lemon extract
  • 1/2 cup sour cream or buttermilk
  1. Step 1. Preheat the oven to 350° Fahrenheit (About 117° Celsius)
  2. Step 2. Line or grease + flour a 9 x 5-inch loaf pan, set aside for later.
  3. Step 3. In a large mixing bowl, throw together 1 cup of sugar with 3 eggs on medium speed for 2 minutes. Then, add in the oil, and melted butter.
  4. Step 4. Add in the rest of your wet ingredients: vanilla, lemon extract, and sour cream/buttermilk (you can add lemon zest + lemon juice for a stronger lemony flavor.)
  5. Step 5. Next, in another bowl, mix your dry ingredients: flour, baking powder, baking soda, and salt.
  6. Step 6. Add in the dry ingredients to the wet, small amounts at a time, until it’s all mixed together.
  7. Step 7. Pour the batter into the loaf pan, and bake for 50 minutes. Once complete, let it cool off for 7 minutes, and enjoy!
  8. (Optional) Step 8. Throw together a quick glaze: 1 to 1/2 cup powdered sugar, 1 tablespoon lemon juice, and 1 tablespoon milk. Drizzle the finished glaze over the cooled loaf, and you’re done!

 


Do you have any tips or tricks on making it, or why people may like this recipe, or any memories from it?

When making this loaf, I usually make two at a time, one plain with glaze and one with blueberries. The blueberries add a nice touch of tartness to the semi-sweet loaf, which is delicious! However, be careful if you do add the blueberries, as sometimes it’ll seem uncooked, but it’s the juice. If you do get an uncooked loaf, throw it back into the oven for 5 minutes at a time, being careful to not overbake it!
